Chicken and Arugula BBQ Pizza

Pizza is by far my favourite food group ;). When you can make it healthy, tasty and have it fit within our meal plan, it’s a bonus! We make pizza of some sort almost every week. 🙂 Enjoy!


Servings: 4
Serving size: 1/4 pizza
Containers: 1 yellow, 1 red, 1 blue, 1/2 green, 1/2 orange


1/3 of pizza dough (swap for whole wheat flour)
2 tbsp olive oil
1 clove garlic
1 cup chicken, chopped or shredded
1/2 cup goat cheese
1-2 onions, caramelized {fry onions in 1 tbsp olive oil for 30 min}
1 cup arugula
4 tbsp Balsamic reduction {simmer 1/2 cup balsamic with 1 tsp honey for 30 min}

 


HOW TO:
1. BBQ the pizza dough, brushed with olive oil.
2. Once the dough has slightly cooled, rub with garlic clove to infuse flavour.
3. Top pizza with chicken, goat cheese, caramelized onions. Grill for 5-7 minutes, or until cheese has melted.

4. Top with arugula and drizzle with 2 tbsp balsamic reduction.
